Le Gaiac at Hotel Le Toiny

St. Barts is an island wondrously private, and the Hôtel Le Toiny on St. Barts’ undeveloped southeastern coast is particularly secluded.  This makes it an ideal location for a romantic, relaxed dinner and the hotel’s restaurant, Le Gaiac, is arguably the best on the island, serving classic French cuisine accented with local flavors.  The restaurant is located on a roofed, open-air terrace overlooking the sea. There is an illuminated infinity pool, lined in lava stone, adjacent to the tables.  A recent Colonial-inspired renovation has given the restaurant a vaguely Hamptons-y look, with a white and pale blue color palette.

The one essential order is the parmesan spaghetti & black truffles.  Although it is hard to mess up anything doused in Parmesan cheese and black truffles, this dish exhibits, in all sorts of subtle ways, the skill of the chefs in the kitchen.  A roasted rack of lamb comes with simply astonishing fregola pasta, worth the price alone.  The meal always should conclude with the smoke-encased cognac cigar.  This innovative cuisine is also presented with great care and creativity.  Don’t miss the superb brunch buffet on Sundays, when you will also have an opportunity to take in the sweeping view and paradisiacal palm groves.
