Sunset Lounge (Viceroy Anguilla)

The design of the Viceroy Anguilla resort, which was recently opened in late 2009, is striking – far more avant-garde than one typically associates with Anguilla, it is jarring at first, then an interesting counterpoint.  It is now, along with Cap Juluca, one of the two world-class resorts in Anguilla.

Perhaps the most dramatic area of the entire resort is the open-air Sunset Lounge, which abuts an infinity pool that extends into the horizon. At the coralline point where Barnes Bay and Meads Bay meet, the view is phenomenal. Outfitted, like the rest of the resort, with modern art and sculptures, the restaurant has a lively bar scene and, as you would expect, is the best place to watch the sunset in the evening over cocktails.  The cuisine is casual – sliders, salad, sushi and sashimi – but high-quality.  The best are the crispy rice appetizer with spicy tuna, Serrano pepper, cilantro and avocado and the Kobe beef sliders with truffled mushroom and boursin cheese.  After dinner, settle in with some aged rum and a Cuban cigar.
